2005 Caymus Cabernet Sauvignon- USA, California, Napa Valley (1/15/2010)
This was popped and poured, and consumed over approximately 1.5 hours.
Purple-ruby color of medium-deep depth; lots of fine particulate matter; medium-full bodied. The nose seemed very “Napa-meets-Pauillac” to me, with an cinnamon note thrown-in for additional interest. The palate showed concentrated red fruits supported by ample (but not gritty) tannins. Both the nose and the palate seem to be wound extremely tight right now. 14.5% alc… Kinda boring now, but I can see this being excellent down the road. For my palate, this should lay for another 10 years.
Nice note, Brian. Describes my feelings about this wine as well. I am a big Caymus fan, but only after it has been aged for about 10 years. I believe the 05 and 07 will be awesome in 2015-2017. The 94’s and 97’s I have had over the last few years have been rather excellent. Caymus has a good track record for aging. Same goes for their SS.
