2004 Pax Syrah Walker Vine Hill - USA, California, Sonoma County, Russian River Valley (1/1/2010)
1 hour decant then drunk over 3 hours. The wine is calming down a bit and now shows some very bright sharp cherry along with light pepper spice. There’s some meatiness to it as well. Color is very dark, wine is smooth and mouth feel is nice. Tertiary flavor development is limited. Although the wine was a real pleasure with rosemary and garlic rubbed lamb chops, I think the flavor development may have levelled off. Whether the curve is flat, down or another upward leap from here is anyone’s guess. I had a 2001 Pax a few years ago that had developed a very smooth white pepper component, but I did not get that here. (91 pts.)
