Popped and gave it a quick rough up in the decanter last night. Upon opening, the entire room filled with the trademark Pax olive tapenade and roasted meat aroma. Still deep, dark purple and it just oozes glycerin. On the palate, big in your face syrah…bacon fat, tannin, blueberries and scorched earth. Damn near a perfect bottle of wine. Label gives the ETOH in the high 15’s, but I never noticed any heat. Uncle Bob gave it a 95 to 97 and I say it is above that easily. I only wished I had more bottles of this.
Went superbly with the Prime Rib-Eye and Cave Aged Gruyere potato gratin last night.
