Popped, decanted 1 hour, consumed over the next 2. Earthy nose, cherry pie emerges after decant. Smooth entry, ripe bing cherries, baking spices, zingy acidity, dusty tannins. Clean crisp finish. Nice pairing with salmon baked in foil with organic red & orange baby bell peppers.
Day 2: saved 1/2 the bottle under cork only. Deeper, richer color, nose had more pronounced red fruit. Rich, almost opulent mouthfeel, yet light. Finish was long and intense, smooth and easy. Had this with pasta cooked with garlic & artichoke hearts with olive oil and was spectacular.
