In honor of Pobega’s hereto before unknown graphic skills, I opened a young (for me Wetrock) Cali cab to pair with a rare Costco Prime T-Bone steak. I purchased three of the steaks 2-3months ago, made 2 for me and the kid using Tex’s family recipe and tonight defrosted the third for me and the Togni.
I would not post a tasting note about a usual Togni since I do not open them for a minimum of 12 and sometimes 15 years post release. Most of you guys aren’t that old. The Tanbark is usually a second label from Togni with wines that he declassifies from his otherwise World Class amazing cabs.
I purchased a few of these because Philip remarkably declassified all of his 2002 juice. The best Cab vintage up to 2007 in this Century and this guy didn’t like it enough to make his Estate bottling. Instead, he opted to declassify all his best juice into the Tanbark and sold it for 1/2 of the list price of the Estate bottling. Some guys you can count on quality even if it hurts.
The wine is classic Cali cabernet. Dark purple to the rim. Deep notes of currents, licorice and spice. There are still some tannin in the intial pour to deal with but they are neither distracting, nor overwhelming. If I remember, I paid in the 40’s for this classic wine and it was well worth it. 91 JB

You may be shocked to hear that I usually don’t drink Togni. There are not enough oak trees in the forest for these guys.

That doesn’t surprise me Mike. Thus, my usual patience of over a decade. The oak and reported “green streak” is never an issue in their teens.

I’m actually drinking my last 1991 Ravenswood Pickberry tonight with rack of lamb. I’ll let you know how it goes.

There are a few more Burgs in the cellar but the Ravenswood is killer with the lamb. Seriously, great Sonoma Merlot and Cab blend. I wish I had a more.
