I was told by someone I trust that it would be a good idea to check in on this. I am so glsd that I did. Yes it was more mature than I expected, but it was glorious. Toast, apple, yeast, deep red fruit and everything else you could want was all wrapped up in this wine. With only 4 people I thought the mag would be fine, but it evaporated. Delicious Champagne that is drinking incredibly well right now.
