I opened an '01 Prum WS kabinett yesterday and visited it throughout the day. Certainly entering the open stage but I think still on the upswing. Was still a little bit fat and the acidity wasn’t showing right away but after a couple hours the acidity started to frame the fruit quite nicely. Have one more bottle that I will save for a few years.
