With a simple roast chicken and root vegetable dinner last night.
*** 2001 Domaine Pavelot Savigny-lès-Beaune 1er Cru Aux Guettes - France, Burgundy, Côte de Beaune, Savigny-lès-Beaune 1er Cru (11/14/2009)** Popped and poured. Earth, spice, anise on the nose. Palate is mostly red fruited, some hints of coriander, coca, and strawberry. Tart cherry comes on with time. Slightly austere for me tonight. I like it, but I was waiting for something to pop…Nice enough, though.
I wanted to say it needed more time, but I’m not making any proclamations until I drink more Burgs and get to know the vintages better. I do have three more, so we’ll see down the road a bit.
So I finished the bottle last night after vacuvin on the counter.
Softened a bit, fatter and rounder if that makes sense. Fruit seemed to darken a bit.

As another glimpse into 01 Pavelot, here are a couple notes this year:
2001 Pavelot SLB Gravains
Just an outright steal for $35. Cool menthol, dark cherry, wet earth and rock/minerals just assault the senses. Really opened up around the 2-3 hour mark, this lingers on the palate for what seems like forever.
2001 Pavelot SLB Dominode
Wide open for business, no decant. Game, marrow and blueberry nose, with some wet earth on the periphery. Brambly red berry fruit is amply acidic and long, just an amazing wine in a great place. Cinnamon and spice work in on the finish.
Let me put it this way - a recent tasting of some 1993 SLB’s showed them just on plateau. Lovely stuff. No Pavelot in the tasting, but comparable producers (Bize, etc). I wouldn’t touch 2001s for another 3-5 years if you’d like them closer to maturity.
