TN: 2001 Chauvenet-Chopin Nuits St. Georges 1er Cru Aux Thor

    Opened this to accompany an herb crusted pork loin with potatoes with brown butter/capers. The dish really called for a Chardonnay but we felt we could get a way with a lighter/earthier Pinot for some reason…didn’t really work and this wine still needs some time. The acidity and tannin are pretty prominent right now. But what is underneath is very nice with dark strawberry/dark cherry, earth and a little forest floor quality. We saved half the bottle so it we’ll check in on it tonight. If you have these, either give them significant decant time or wait a couple of years. (89 pts.)
