another gorgeous 2000 white Burgundy–enjoyed way too young, but really enjoyed–it’s a superb wine. With none of the characteristic Ramonet mint/rosemary, the wine has an explosive nose full of fruit, much tensile strength in its coiled acidic structure, all wrapped with refined citrus fruit intertwined with green apples and with a beautiful midpalate sweetness with a lovely creamy texture. The density of this wine gives it away as Montrachet but how can it be so airy and light while being so layered and complex? After a couple hours, the acidity took over and the wine went into a bit of a shell, but with dinner, the wine was wonderful . . .
