Quintessential old school Chablis with a huge backbone of acidity dripping with minerality, lemony fruit and some herbs (that I always seem to find in Preuses), this needed 90 minutes to strut, took control of my mouth and palate and twisted it any way it wanted, a wine that just dominates and subdues the taster with its intensity and acidity. (Can you tell I’ve been watching MMA?) Great Chablis–2000 Dauvissat Preuses.
I’m in Healdsburg for a few days. Ate at Cyrus last night…They had the 06 of this for $165 (1/2 bottle) and the Le Forest for $105. I was tempted but I thought they would be way too young. Of course I ended up with an 06 red burg so perhaps not the most logical decision.
Sounds like a stunning bottle, Alan. I got to try the '00 Clos a couple months ago and it was also impressive. Very intense, as you note. In terms of body, it had more in common with Cote de Beaune whites than with Chablis 1er crus, even the Vaillons of the same vintage served immediately before it. Clearly still extremely young.
