TN: 1996 François Raveneau Chablis 1er Cru Montée de Tonnerre

    Just the perfect Chablis in the perfect place. It starts off quite tight with barely a whiff of toast and citrus and a palate that is dense and linear. It breathes to show notes of custard apple, mandarin, grapefruit, apricot and mineral. It is rich and textural yet still under a tight rein from its strong acid backbone. Length is superb and it just gets better and better in the glass.

I made the mistake of ordering one of these off a wine list way too early (maybe 10 years ago). One of the most searingly acidic wines I have tasted at the time. Nearly eviscerated by the others at the tasting, who wanted their soft and poofy California Pinots I guess…

Fabulous. We had the 2010 at Maison du Colombier in Beaune last week. Just awesome wine.

'96 Valmur last July was much closer to 10 years too early than at a perfect place FWIW.
