TN: 1995 M. Chapoutier Ermitage Le Pavillon

This wine fit the bill last night with a couple of steaks. I’m craving nice bottles of syrah more and more often now and Kelly doesn’t complain :slight_smile:.

1995 M. Chapoutier Ermitage Le Pavillon: This was full of beef juice - more medium rare savory juices with touches of tangy roasted herbs. Very much more open from memory when the last time I had this. Flashes of bright blackberry compote, light touches of earthy pepper, and daft touches of cured meats. All of these elements are really understated on their own but together stand as a monument to Hermitage Hill. I found myself smelling this a lot and just love the profile.

I’m glad to have the Chapoutier bottles I have resting for the future. I think they will very rewarding with more age!
