TN: 1993 (Domaine) Louis Latour Corton

Dined at La Panetiere in Rye, NY tonight. A great restaurant, if you have never been. Many cool older btls on the list at reasonably prices. No jacket required anymore, which I like and the owner, Jacques, is always around and super friendly.

Food was great (sweet breads as main entree were perfect).

Found 1993 Louis Latour Corton (Rouge) on the list for $95. I figured why not. I brought a btl of CDP as a backup anyways.

The btl was labeled Domaine Latour. Never seen that before but the neck label was the normal Louis Latour label. Not much of a fan of their reds, when opened this met those expectations. I had about one glass before food came and was very underwhelmed. Very soft, short, lacked fruit, tasted like old Burgundy. Then it all changed at the end of appetizers. This wine gained weight, gained (sweet) fruit, shit it might have even gained color, and it paired very well with the short breads. I have seen wines shut down or in a weird stage, but not really like this. I would never have expected this one to improve while the btl was opened for an hour, but that is exactly what happened.
