You can say that again. Reading this, I remembered we used to go to Souverain for their Sunday Champagne Brunch about every other month in the late 70’s to early 80’s. They were very generous with their pours, and they always had something in the tasting room on sale.
Gary Danko ran a restaurant there, as I recall.
Whatever magic happened in '91–I haven’t found it in other vintages. The '91 was a memorable wine which made me chase down some other vintages. Drinking a '94 tonight–and while very good it doesn’t have the magic. I don’t know what they did in '91–but if someone would try to recreate that wine, it would be much appreciated.

Love those quirky bottles too! I haven’t had the ‘91 or ‘94, but the ‘97 was incredible!

I had a 73 Souverain ‘Burgundy’ a handful of years ago that was awesome! Guess they used to make some pretty good wines
