TN: 1989 Château Cabrières Châteauneuf-du-Pape

    Sourced from a good cellar- perfect provenance and fill. Deep garnet core to medium/pale edge. Initially this seemed past its prime showing only roasted meat and oxidated notes (bruised apple) and just acidity in the mouth, but after two hours this began to really shine. Deep nose shows Smokey fruits maybe fig and prunes, fresh charcuterie, but the flavors on the palate show more complexity adding pine, hot rocks and warm cherry pie via a sweetness note at the end. Over time the palate fleshed out too. Shows some heat and still presents oxidation but only enough to still be interesting. This exceeded my expectations. Wish I had more and wish I opened with company. Drink now as it is on the decline. (92 pts.)
