Tonight with Nita’s grilled Filet Mignon…

Dark ruby color with black center. Starts off with big wiff of smokey oak, so into the decantor it goes. Once in the decantor the oak blows off immediately and is followed by a very pretty floral aroma of roses and minerals. Then quickly back for some more oak on the nose. So I let it sit for about 30 minutes while sipping a crisp tart grand cru N/V Pierre Peters Brut from Le Mesnil Sur Oger. As I’m drinking this BdB Champagne, I’m thinking, no more young Pierre Peters for me! I think PP needs some btl age to round out and this is a touch too austere right now. Back to the Le Serre Nuove as dinner is approaching and I want to see how its doing. Much better w/ 30 minutes in the decantor! The oak is still there but way more in the background now. This wine has great concentration and intensity of fruit but yet is not remotely heavy. The tanins are very silky and the flavors rich chocolate covered rasperries. The nose and the palate both have a very appealing minerally note. Very fresh, long, and great balance. 14.5% Alc but I didn’t notice. 93pt+
