Yes! I can’t stand ketchup on fries. Although I love Belgian-style frites, I can’t say I had any fries in Belgium that stood out. Off the top of my head, my favorite fries have been Pommes Frites, NYC, the truffles fries at the Dundee Bistro in Willamette Valley wine country, Alberta Street Oyster Bar & Grill here in Portland, and at a fairly touristy parilla in Buenos Aires called El Establo. I don’t want fat fries, and I don’t want skinny fries. Something in the middle works perfectly.
Although some of my favorites are fried in vegetable oil, the texture and flavor of fries cooked in animal fat is a seriously wonderful treat.
