Okay! When last we saw Mr.T (for Torchon) he was hanging out in the walk-in, just chillin’.

Today he got unwrapped, sliced, brushed with Dijon mustard, and rolled in breadcrumbs. See next post for that picture - I can’t stand that they come out in the wrong order!

Thank you for all the wonderful pictures @Dennis_Atick and @Steve_McL It’s hard to express what a pleasure it was having you two, @dcornutt and @Matthew_King last night. Being a good host just takes practice, but being a good guest is a skill as well, and is a great gift to be able to give. Thank you.

So, about that torchon - to plate, it goes on a classic Sauce Gribiche, and is topped with egg white, half an egg yolk, and two tiny tarragon leaves. I’d say it came out very well.

I think this is all the wines that were correct except the 02 Comtes de Champagne which went somewhere…

I’m guessing that the Lignier was Steve’s, the Emidio Pepe was Dennis’s, the Corton Charlemagne and 2021 Raveneau were Don’s, and the 2005 Raveneau and the Cristal were Matt’s. How did I do?

About half right. The Lignier was Steve, the Pepe was Dennis and the 2021 Raveneau was Don’s. The Corton was Matt’s, the 05 Raveneneau was Dennis, and the Cristal was us.

What an incredible dish and unbelievable dinner. So delicious. The acid of the sauce played beautifully with the rich torchon. Bravo to you, Sarah, and chef Jonathan

Allemand was flawed?

This is stunning in every which way, as far as I am concerned. :raising_hands:

How does one go about procuring half an egg yolk? I suspect a strong cure of some sorts? or a hard boil?

… fuggin unbelievable! I love this. All of this!
