The "Flannery" for Chicken? Or Pork? Or Lamb?

Cost not a factor my opinion is the best chicken is from rainbow ranch about two hours outside Los Angeles. Before it closed, lindy and Grundy used to carry and they were spectacular.

Winfield Farm Mangalitsa Secreto. This is by far the best pork I’ve ever had. Seasoned with salt only and finished with a light sprinkle of fennel pollen. It definitely is a fatty cut, but the fat really melts away and adds to the overall experience. The collar steaks they sell are also quite good and cost quite a bit less than the Secretos.

Love Mangalitsa, so I checked this out. Looks good, but beware high shipping costs, especially on small orders.

After seeing a video on Eater.com where the chef was clearly using meat from 44 Farms (you could see the box in the background) I ordered from them. A brisket and several steaks-NYStrip and Ribeye. Amazing quality. I know it is sacrilege to say on this Board but the two times I ordered from Flannery I was sorely disappointed. I received a huge second order from 44 Farms yesterday. Porterhouses. They look fantastic and two of them are up for the grilling tomorrow night. It is the marbling and beef flavor without excessive fat to trim that makes me such a fan, and that likewise caused me not be enamored of Flannery.

I too really like 44 Farms. Unlike you, I slightly prefer Flannery, but 44 Farms is much less expensive. And it’s from Texas—most of the top restaurants here use 44 Farms beef, but I suspect they can get bespoke orders of the highest end stuff.

They are not selling the same product - wet aged vs dry aged, ship frozen vs fresh, Angus vs Holstein, few/no “butcher” cuts vs some. I agree that any one place isn’t going to have everything you want, e.g. I like some things like Bavette and Korean-style ribs a lot and it’s not what Flannery does, so variety is good thing. Can’t buy live cattle at Flannery either :wink:.

I ordered a 30 pack of chicken cuts from Pasture Bird a few months ago (when they weren’t selling half or whole birds). Having worked my way through the various cuts since then, I have to say they are not for me. While they arrived fully frozen, the packaging was on the thin and flimsy side, with several of the vacuum seals compromised. But really, the flavor just doesn’t do it for me. Hard to explain why. Just had some chicken thighs tonight, and the meat was on the dry and tough side ( not overcooked). Just another point of view, but I won’t be reordering.
