America to blame?
The article makes it sounds like it is as much or more the fault of the French than America.

The article is stupid, the premise is stupid…she had a point of view and set out to wite a piece… blech.
Steinberger’s comments on operating a restaurant are totally valid… nice to see the French reduce the VAT on food in restaurants to help

In the US, as well as in France (or elsewhere), there is terrible food and great food. In both countries (and anywhere else), I choose carefully where I eat to ensure a good meal. With all the information readily available these days, one pretty much only has one’s self to blame in choosing a lousy restaurant.
I hated the Steinberger book-an unfortunate combination of almost total gastronomic ignorance and obnoxious political polemic.
