We have bagged the coffee in light and oxygen protected bags with a 1 way valve, so no oxygen can get into the bag. We tend to like the light roasts best at about 1-2 weeks off the roaster and see the quality start to fall off 6-8 weeks off the roaster. But people really have varying opinions about this.
I also wanted to note for people, that while we roasted everything to a city roast, the Red Honey process and Natural process coffees do look darker than the washed and anaerobic natural process. So it may look like we roasted them to a different degree, but they are roasted to the same temperature and on the same curve as the others.

Been pulling shots of the Mexi Geisha and it does not disappoint. 20g in, grinding on a Kafatek Monolith Flat, pulling on my old Cimbali M20 lever machine. SUPER floral and wine-y aromas, and sugary sweet. I know this is intended for pourover but damn it works really well with a leverâs declining pressure profile.
