Welcome to the insanity! We (Willamette Valley) have some great Gamay up here. My wife and I are lucky enough to have convinced my mom (who owns Menefee Vineyard) to plant an acre for us. High elevation, beautiful fruit since we started bringing it in in 2020. @grant_coulter Hundred Suns are also making a great Gamay!

Hey @Alexander_W with the 2021 Pinots of Oregon (and specifically our Tower Pinot Noir) the window is pretty big. I typically make wines that benefit from but do not require a bit of cellaring. We are just about the release it, and it is tasting great right now.
Such a messy answer, but here it is: Drink NOW and LATER! They are superb right now, but the acidity, oak regimen and tannins will allow you to hold onto these comfortably for 5 years, and even longer.
Come visit us and I will pull out a 2014 and we can test the waters together!
