I love flap meat. Tex is correct, as usual. Make sure the meat is room temp, flap isn’t great rare but is great at a perfect medium-rare.

isn’t that pretty much the marbling on most short ribs that are prime?

Regular old non-prime short ribs are pretty marbled too. Lots of connective tissue though. That’s why you almost always see short ribs braised.

I thought the pic was about mislabeled prime strips, as the meat looks more like strip than short rib, but not quite 100% strip either.

Anyone familiar with Lobel’s of NY? Given the outrageous cost is there anything you might recommend that is comparable?

This is my go-to skirt steak source, always available, essentially equivalent to skirt (which is a lot harder to find around here). Treat it exactly as you would skirt.

Not sure why they aren’t what the package says: short ribs. I’ve bought these same primes at Costco before, they sure seem exactly like any other Choice short ribs I’ve bought from them, or like the Primes I’ve bought from Flannery in the past. These Costco Primes are excellent, made a great traditional braise.

Everyone is going to say Bryan Flannery. But, his prices are getting up there as well.

What are you looking for…Dry Aged Prime, Domestic Wagyu, custom cut, custom dry aging, mystery cuts, etc.?

flannery. close to you. Cheaper than Lobels. Cheap shipping or if you’re really interested you could always go pick it up

If it helps, the sides had what looked like residual rib markings/stripes.

Thanks Bill. I’m not a big steak person, but now and then… I don’t know my preferred cuts as I rarely order a steak. Maybe a Wagyu or aged NY? I am attempting to host some friends over who are big meat eaters and I thought a NICE steak would be easy since I don’t cook.

Everyone is going to pile on and say Bryan Flannery. His product and customer service is second to none, but pricing has been creeping up for non ‘friends and family’.

I am a fan of Montana Wagyu Cattle Company. They offer domestic wagyu that is dry aged as well as cut to spec. Pricing and shipping are nothing like the big boys.
