Looks good and glad to hear it was enjoyed but it does take a lot of nerve to bring that to the table if you ordered it medium rare. Did they cut it at the table or in the kitchen?
Jack was my butchering instructor at the New York Restaurant School in 1984. Unfortunately, I didnāt learn about this cut until much later. I do tie them as the article recommends and I think the marbling speaks for itself.
They usually run about $7.99/lb. Iād take this over the choice porterhouse that Wegmans sells for $10.99/lb⦠The meat is very moist and although toothsome, not at all tough, but very flavorful.
Do you know whether āNewport steaksā are available outside of Florence Meat Market and/or whether the cut goes by any other name? I have a good butcher near my house and might want to grab something different for the weekend.
As far as I know and the article above indicates, there are others who claim to fabricate the same cut. Having never purchased from anywhere but Florence, I canāt speak for their products. I donāt know if Florence ships but one can always ask.
