Looks good and glad to hear it was enjoyed but it does take a lot of nerve to bring that to the table if you ordered it medium rare. Did they cut it at the table or in the kitchen?

The center is medium rare, but the one side clearly got too much heat. Very asymmetrical.

Yeah, I remember on Top Chef a few seasons ago Tom took a chef to task for this very thing.

Cut it in the kitchen. Here’s the kicker. $175. If I was paying I would have raised a ruckus.

Florence Meat Market Newport Steaks.

I am a big fan of alternative cuts and this is why:

Grilled over mesquite to MR and the flavor was awesome.

Never heard of a ā€˜Newport Steak’, so I did a search. Among other things, found this history:

Jack was my butchering instructor at the New York Restaurant School in 1984. Unfortunately, I didn’t learn about this cut until much later. I do tie them as the article recommends and I think the marbling speaks for itself.

They usually run about $7.99/lb. I’d take this over the choice porterhouse that Wegmans sells for $10.99/lb… The meat is very moist and although toothsome, not at all tough, but very flavorful.

Do you know whether ā€œNewport steaksā€ are available outside of Florence Meat Market and/or whether the cut goes by any other name? I have a good butcher near my house and might want to grab something different for the weekend.

As far as I know and the article above indicates, there are others who claim to fabricate the same cut. Having never purchased from anywhere but Florence, I can’t speak for their products. I don’t know if Florence ships but one can always ask.
