Just a plain old NY strip. It was frozen, threw in the circulator at 55 for about 30 minutes. Pulled out seasoned up then on the grill. Wife said it was extra beefy.

Last bottle from release, phenomenal 10yrs ago…and it has not skipped a beat! Still inky dark berry color with the slightest pink rim…SO youthful and full of life! Just loaded with rich and extracted Mtn. fruits…not at all goopy…six pack of abs with great balance to the voluptuous side…dry graphite and dusty spiced tannins…Calif for sure! Plenty complexities of classic Pride Mtn mocha, warm chocolate brownies, tobacco wrapper, licorice, spicy cedar woods…just the slightest of alc poking through, but doesn’t distract…just so solid and aging at a glacial pace…has decades left…just wish I had more for the road! Blue mold generally means spoilage. Throw away.
Is it just me or does that look like the mold is on the outside of the plastic and not inside the package with the meat?

Grilled up some protein yesterday at @Frank_Murray_III for Falltacular. Morgan Ranch Strip Loin Medallions, Marrow Bones, Hangers, Chicken, Lamb Chops, Korean BBQ Short Ribs, Carne Asada, Wagyu Sliders, Tri-Tips whole and steaks, Iberico Hangers, Prawns, Sausages etc. 3-1/2hrs straight!
My cholesterol is great; my blood pressure is my bigger concern ![]()
