So, here’s the story…We’ve got two Tomahawk cuts. Long Bone Tomahawks for our restaurants - like Morrie’s in Sioux Falls, SD. And Short Bone Tomahawks for our retail customers.
The reason for the difference - shipping containers. Those long bones just don’t fit in a regular container. We don’t normally even keep the Long Bone Tommies at the ranch, but had 3 in the freezer. AK was getting a big box, so I was able to ship them.

Pretty much. They are all cut from the same primal from our private selection carcasses. Differences in weight, bone length, and what part of the ribeye becomes the steak.

Decided to do a combo cook for our anniversary.

Morgan Ranch 20oz+/- Bone In Strip
Flannery 16oz+/- Bone In Strip

24 hours in the refrigerator with kosher sea salt and fresh cracked black pepper. 30 minutes outside the refrigerator at room temperature. Put into a Traeger at 250* until 105*. Seared in a cast iron skillet with beef tallow. Both were unbelievable with unique characteristics. Picking a favorite would be like picking a favorite child.

That board shot is awesome!!!

Got off a plane this afternoon from BER → CDG → SEA and wanted some grilled meat. Sunday night dinners at our place always end up including friends, boyfriends and everybody else in the neighborhood, so I grilled a bunch of steak and kebobs.

Turns out, when your daughter is dating a 280 lb offensive lineman, you’re going to need more steak…

I had a son that ran cross country. He ate almost as much as the football player. Just more carbs and less protein. Burned it so fast with workouts you’d never know it!

My stepson started rowing crew. I’ve never in my life seen a human’s appetite increase that rapidly! He’s lucky his stepmom is a nutrition and fitness fanatic, because HS coaches aren’t teaching them anything about how to fuel. His teammates have been struggling, but Oscar gets sent off properly topped up.

Had a chance to host @Carrie_Morgan and Cam last night as they vacationed out in the great Pac Northwest. I invited a couple of friends that I knew were regular customers (@Carter_Y ) and we ate A LOT of beef.

Grilled three tomahawks over pecan chunks, then trimmed and grilled two skirt steaks - one that we topped with chimichurri (gotta cut through that rich wagyu fat) and another that I marinated in some homemade teriyaki. I have to tell you that I was a little nervous with the cook; it’s a different ballgame when you’re serving dinner to the people that raised the animals. Ended up having a great time, drank a lot of wine and everybody got to meet Valor!

A handful of Flannery last night…the cut shot is of the ribeye. Did them reverse-sear and finished in cast iron. My house still smells.

Looks wonderful.

Early celebration of my wife’s birthday, 32 oz Flannery porterhouse seared in the wood fired oven then finished over low heat in the gas grill. Not the best sides/plating, had some mushrooms that didn’t make the photo.

any big Snake River Farm fans? I need a brisket for Xmas, today they are 20% off. Do they go to 30% or higher for Black Friday or Cyber Monday? Tried to check online and I just get all the stupid coupon sites but nothing about last year’s sales.
