That is a strange package. That it says âKobeâ on the sticker is just the tip of the iceberg, but âAmerican Style Wagyuâ presents a whole different set of questions.
We have gone round and round with the âKobeâ moniker, so Iâll skip.
This is domestic black Wagyu sourced from Snake River Farms or Imperial Wagyu. By law it has to be at least 50% Wagyu to be able wear the label. Most is 62.5% or better.
