Sorting our Alpine Vineyard Pinot tonight and opened a bottle of “sorting fluid” to speed the process-
2000 William Fevre Chablis Le Preuses Grand Cru -
Killer. Pale in the glass, a bit of oak on the nose, but multilayered. Showing tons of honeyed chablis character with an almost painful amount of saline. Great attack, fleshy mid but closes with a great hit of linear acidity. This is my kind of sorting wine. No premox of any kind, experienced tasters at the table pegged it as GC Chablis, but no earlier than 05, as it was tasting so young.
