Some tasty roast chicken recipes

So the discussion about chicken stock prompted me to look for other ways to roast chickens and I hit up my fave food site, food52.com. In a nice coincidence, they had a feature on just that…

Haven’t tried any yet, but will be trying some and they looked so tasty I thought I’d share.

Nice. Always good to have some variations on a classic staple. Serious cooking going on over there.

My wife and I love roasted chicken and we always save to bones to make stock. Nice website, I haven’t seen it before.

Anybody besides me use a metal stand to roast chicken?

I like food52 a lot. They regularly run 'best X" contests, but a lot of times they’re offbeat. For example a 'Best Stew with Olives" led me to this a recipe for Braised Moroccan Chicken & Olives (Best Braised Moroccan Chicken & Olives Recipe). One of the col features is that you can mouse over any step or ingredient and ask a question about that particular thing. That’s where the “6 Questions” tab in the first chicken recipe is from.

ANother site I like is http://www.gojee.com/ which aggregates recipes from food sites and food blogs and then lets you find them by telling it what ingredients you have on hand. You can put in dislikes too or even something you crave if you really want an ingredient but don’t have any good recipe ideas for it.

Glad you like it. They’re just doing a bunch of stuff right I think and going way past the “here’s some tasty recipes” model.

Not yet… week was busy, so I didn’t have time to cook much.

Well, today I happen to be at Costco, so picked up a couple whole chickens.
Got the marinade on the bird, into the ziplock and frig.

We shall see tomorrow…

That site does look great. Think I will try the coffee marinade chicken and the 2 hour broccoli.

Speaking of roasted chicken recipes, I am amazed how good Thomas Kellers Bouchon recipe is and so simple. S&P, thyme and tie string and a hot oven. Incredibly delicious.

Well, the chicken turned out nice. (for the misoyaki recipe)
Succulent, juicy meat.
I would say it was a very good recipe and simple/easy to do, but not mind blowing.
As someone else mentioned, very similar to soy sauce chicken IMO.

Definitely worth a try to see what you think.

I’m not sure roast chicken is suppsed to be mindblowing. For me, it’s really tasty comfort food but I can get into a rut with it - (add herbs, salt, pepper… /yawn) so I like variations on it. I want to try a curry-style rub at some point. I’ve done it, but too much 5 spice.

I agree, it’s just one of those things when you want something tasty in a snap, it’s easy enough to do and you can feel comfortable with the quality.

Made the coffee chicken tonight. Very easy to make but you do have to get started well before hand (brining). Incredibly moist chicken with no coffee flavor. The sauce is what this dish is all about, a little sweet and moderately rich and very delicious. Definitely a keeper/

Also made the broccoli cooked forever last night. My cooktop is a little too hot on low (I do have an alternating flame but failed to use it) and ended up burning it a little. But it still came out pretty incredible. Think vegetarian duck confit. Very rich and succulent. Spread it on a slice of toasted La Brea whole wheat bread. Oh my me likey! I used 1 jalapeno pepper cut in half but will opt for something a little hotter or use 2 next time.

yay! I just did a pasta with tomatoes, sardines and fennel from there.

A couple of things to note about the site is that you can signup and save recipes there and you can follow people so if someone seems to post stuff you like you can see as they post new things.

Made the miso chicken. Ridiculously good. Really like the onion sauce
