So.....what are your favorite uses for leftover turkey?

Time to resurrect this conversation! Feel free to add new ideas, things that work and even misses! We are having Fleming Turkey Hash tomorrow with a side salad and crusty bread. Pie with ice cream for dessert… We will work it off playing Kinect.

Turkey juk.
Turkey kimchee tacos.
Turkey skin crackling.

If I’m unfortunate enough to have turkey leftovers I prefer to use them to soak up spills in the kitchen or on the drive way. [snort.gif]

So far we’ve had turkey & chanterelles omelette for breakfast, and tomorrow we’ll be making turkey tacos. The best part is the caramelized butternut squash that goes with everything.

I’m in the sandwich camp. Gobbler, lots of mayo, red onion, avocado, swiss or jack cheese on sourdough. Heaven.

Sweat some onions and maybe some mushrooms, add cubed bird chunks then mix in scrambled eggs and cook a minute or so. Breakfast.

We make Turkey Pot pies or Sheppard pies and freeze them. If we run out of stuffing or mashed potatoes to put on top, when we take them out of the freezer we use biscuits on top.

Open face sandwich: Toast bread slice, spread a Chipotle, mayo mix, add turkey, avocado and cheddar cheese. Place the sandwich in toaster for a couple minutes til cheese is melted.

Similar to Steve. Red pepper jelly miracle whip mix. Also turkey wild rice casserole.

Well I guess we can always get together for leftover turkey next week.

I make a white sauce (but use 1/2 turkey stock) add in curry powder and some cheese. Toss cubed turkey with sauce and blanched broccoli place in casserole and cover with panko crumbs and a dot with butter. 375 for 30 min rest 5 and serve.
