Smoked Sturgeon Salad with Rosé

Tonight’s light supper was a delightful green salad dressed with a vinaigrette seasoned with onion powder, chervil, dill weed, celery seed. kosher salt, combined with beet horderadish, Meyer Lemon Olive Oil, EVOO, and Yuzu rice vinrgar. The salad was topped with six thin slices of smoked sturgeon each, topped with a mixture of crême frâiche and beet horseradish. Al was enjoyed with a Cataluyan Rosé, 2007 Châreau de Caladron, Côtes de Roussilon, Rosé de Vent - Dark rose in color, bright strawberry - berry fruit in nose & flavors; perfect acidity to match the salad, and a medium long berry finish.

Another nice meal out on our patio, after a warm day (mid-80sF) that cooled off in the evening with clouds and a breeze.

Then we finished with the last of Bill Ackerman’s home-grown peaches macerated in vanilla sugar & Grand Marnier, served on half a buttermilk biscuit each, with a mixture of crême frâichw and heavy cream lightly whipped. Tis was enjoyed in our den, while watching the finale of Top Chef Masters and two old Mavericks (from 1960) (via TiVo) with a couple small snifters of Grand Marnier.

Oooh, that salad sounds awesome, Dick. Have to admit that even in the summer I’m not much of a rose’ guy, but I could definitely see eating that salad [wink.gif]

We enjoy a variety of rosés with summer meals. We get a mixed case each year, and manage to drink most of them.

Just yesterday we visited the fish hatchery and sturgeon center at Bonneville Dam, where a number of decent-sized adolescent sturgeon (3-4 foot long) are on display in viewing pools. There’s one giant specimen, about 7 feet long (not nearly as large as the ones previously on display but still pretty impressive) and all I could think of while watching it swim was how awesome that thing would taste if it were smoked.

Who’s Herman? Smoked Sturgeon is almost as good as fresh sturgeon sautéed and finished with a good brandy sauce.

I like sturgeon, sauced with a little white wine…

Just because something has a name doesn’t mean it’s not food.
