Shiba Wichern Cellars is Akiko Shiba (my wife) and Chris Wichern (me). Akiko, a Japanese national, completed her enology and viticulture degree at University of Geisenheim in Germany’s Rheingau. In 2009 without having ever even visited we moved to Oregon in search of world class Pinot noir. A lot has happened since that first vintage. Together we now produce about 1,000 cases of hand-made wine per year at our “garage-winery” in Willamina, OR.

This is the view from the top of our blocks at Momtazi during harvest. Those yellow and orange crates hold about 23 lbs of grapes and are referred to as FYBs here in Oregon - F#$&ing Yellow Bins. Everyone hates those bins, because they are labor intensive, but they deliver the fruit to the winery in pristine condition. It’s a love-hate relationship for sure, but it’s worth it for us, the wine and you!

So much happening in this picture. First of all everyone is smiling, so, we must be getting to close to the end of the day. Our “every cluster gets picked up” sorting process is also visible. Clusters on the outside of the belt are unchecked. Once a sorter picks up a cluster, checks it and potentially cleans it, only then does it go to the center of the belt. It takes an enormous amount of manpower, but every cluster gets sorted twice - once in the field and once on the line. FYBs are what allow us to sort like this, which is why “SWC
FYBs” - look in the upper right corner…

WINE DETAILS
All of our wines are fermented with indigenous yeasts. None of our wines are fined (“chemically cleaned”) or filtered. The only additive to our wine is SO2, which we add at the smallest dosage possible, typically < 40 PPM total. We don’t do it this way because we want to make natural wine. We do it this way because we think it tastes better.

The gold color of the 2023 Auxxerois is stunning. So are the structure and flavor.

- 2023 Havlin Auxerrois, Van Duzer Corridor AVA, 42 cases, pH 3.5, 12.8% ABV, 21 months aging in stainless steel, bottled on 8/10/25 | 100% Auxerrois stunner.
- 2023 Havlin Chardonnay, Van Duzer Corridor AVA, 96 cases, pH 3.25, 12.9% ABV, 21 months aging in new & used french oak, bottled on 8/10/25 | Our second Chardonnay ever. Moderate battonage yielded a delicate, but powerful Chardonnay!
- 2023 Rosé from Pinot noir, Willamette Valley AVA, 49 cases, pH 3.02, 11.8% ABV, 17 months aging in new & used french oak, bottled on 5/10/25 | Rose fermented and aged in neutral oak is a special thing. A lot more cerebral than “just some porch pounder.” Go ahead and quote me on that.
