I’m guessing I’m about 97% pull from the cellar. Purchase and drink for me now if limited to roses typically, a few whites, and something I just want to try. I’ve got whites and Champagne a plenty to pull from the cellar in the warm months, so I might be able to pull a CA viognier for example out of the cellar but I never had any intention of keeping that more than three years when it was originally purchased.
I buy UK-style. Burgundy en primeur in January, with late releases from the big guns coming in November. German pradikat wines en primeur in May/June, with Prum shortly after. GGs and auction wines in September. Keller whenever Keller is sold. I drink German wine all year round, very little red burgundy in the summer and tons in winter, spring and fall. I peck a bit at other stuff but nothing else keeps my attention for long.
100% from the cellar. And I don’t believe in seasonality, or more likely laugh in its face. Like I said earlier, the only time I’ll have a rose is in winter or toward the end of winter when you begin to tire of the white snow and want a splash of color to pit against it. Summer calls for heavy reds to go with all that braai. As for Champagne, if I want bubbles, I’ll drink carbonated beverages.
