Seafood Gumbo with Icon

Tonight’s supper was trimmings and leftovers from our sashimi dinners prepared in a seafood gumbo. The gumbo was the halibut and yellowtail, cubed and sautéed in Meyer lemon olive oil with garlic, rosemary, and Cajun seasonings. To this was added rich seafood stock, cooked rice, peppers & tomatoes, with more Cajun seasoning, no okra - but gumbo filé added a few minutes before serving. It was rich, nicely spicy, with some added Cajun Hot sauce, and quite tasty with a 1999 Ravenswood Icon - deep, dark garnet in color; nice spicy nose and flavors of spicy blackberries and black raspberries; a rich fruity mid-palate with good acidity and resolved tannins; and a long spicy fruit finish. A pleasant meal on an almost Spring-like day.

Then for dessert, while watching various TiVo’d shows in the den, we had TJ’s Jumbo Raisin Medley with mixed nuts, and a 2002 Maculan Torcolato. The light, but tasty, Torcolato was quite good with the dried fruit and nuts.
