Savory oatmeal

So I’ve been seeing more and more recipes about savoy oatmeal for breakfast in online blogs/cooking websites. I like “traditional” oatmeal well enough (and, obviously, there are the health benefits to take into consideration) but I’m not really a “sweet breakfast” guy. So this morning I tried a very simple preparation of steel-cut oats with chicken broth topped with a poached egg. Sold! [thumbs-up.gif]

Any recommendations for other add-ins that wouldn’t take up a lot of prep in the mornings? Spinach? Cheeses? Breakfast meats?

I like steel cut made like polenta.

Cook it with water and butter, then stir in grated parmigiano, s&p before serving.

I like this as a side dish with dinner, but why not for breakfast?

I think you could add just about anything. Spinach, mushrooms and cheese (either cheddar or Gruyere) are a classic combo that I think would be nice. At this time of year, I’d do something with squash or pumpkin.
This reminds me that I need to try out a recipe I found for whole wheat waffles with spinach and cheese. I think my don would dig them and they should freeze well.

Goetta is a scrapple-like dish made from oatmeal instead of corn meal. Add shredded braised pork shoulder or crumbled cooked sausage to the cooked oats, spread in a tray or pan, and chill overnight. Cut into slices & fry.

If you google cantonese jook/congee, the recipes there can translate easily into oatmeal.
