Fogo de Chao should best be named as Fork de Upchuck.
The salad bar is worthy of a visit by itself however. And the gougers they serve also don’t suck.
But, like you said, good call that it was only a tip you parted with.

Fogo de Chao is I think the place you refer. I’ve had decent meals there. Sounds like you were there on a busy night (TX/OU game) and they were overwhelmed.
Certainly they should be better, and not be quality controlled by the volume of diners, but even 3-star michelins have their nights where they are overwhelmed.
Is it Flannery?? Generally not. Can they do a nice meal. yes.
Should you go back… that’s up to you but I’m guessing not although next time I’m near one I’m there because it’s fun and the food is decent (not mind blowing). And that’s all I ask for a “meat restaurant”.
