Low yield, organic farming with traditional plowing of the soil. Green harvest and manual leaf thinning. Hand-picked at harvest with sorting tables before a gentle pneumatic pressing. You would be hard pressed to find the new oak imparted in this wine.
Fermentation in thermoregulated stainless steel tanks. A part of the wine is vinified in “cement” and “inox” tanks and another part in new oak barrels for about 10 months. Aged on its fine lees with batonnage” (lees stirring) to keep the lees in contact with the wine, further deepening the wine’s depth and complexity.

Menetou-Salon, Loire Valley
Menetou-Salon is the neighboring region (AOC) to Sancerre and is distinctive for its excellent Kimmeridgian soils that produce excellent Sauvignon Blanc wines similar to Sancerre but for less money than Sancerre can ask because it is less famous and harder to pronounce (men-ah-two). This is an utterly pure and classic example of the Sauvignon Blanc grape and a must for any Sauvignon Blanc fan to get in their glass.
A 5-acre plot of Kimmeridgian limestone. Terroir was made of ocean deposit from the Jurrasic era. Tiny oyster and oyster shell fossils are found all over this soil.

Menetou-Salon is the tiniest appellation of the Centre Loire which also includes Sancerre and Pouilly-Fume. It neighbors Sancerre just to the southwest. What makes the steep hillsides of Menetou-Salon unique is a single terroir of Kimmeridgian limestone or “Marne à huîtres” (Oyster marl) like they say locally. It’s the same terroir found in the Grand Cru hillside of Chablis or in the Aube sub-region of Champagne. This soil typicity combined with a slightly higher altitude than its neighbors at 1,000 feet, provide a profoundly mineral, floral and ripe citrus fruit laden fresh character to the wines.
