RÖSTI is a swiss classic and a partner for the famous veal dish “Zürcher Geschnetzeltes”. But you can make it for all kind of meat dishes.
Ingredients
1kg potatoes
1-2 shallots
butter&oil
Preparation

Peel the potatoes

Chop 1-2 shallots
\ -
Sautée softly the shallots in butter+oil
\ -
Put aside the shallots
\ -
Grate the potatoes
\ -
Heat some butter with oil in a non-stick pan or iron pan.

Add 500g grated potatoes into the pan, add salt, then add shallots, again another 500g grated potatoes into the pan , add salt and press it a bit with a spatula

Sautée for 10min. on medium heat
\ -
Flip the Rösti to another plate, then add a knob of butter to the pan
\ -
Carefully glide the Rösti back to the pan. Cook for another 15-20min. After 10min. add a lid. And reduce it to low heat.
