Reprise of Thanksgiving

Tonight we had most of out leftovers from Thanksgiving, served just like Thanksgiving. Carollee stripped the carcass this morning. There was lots of meat and we froze the remaining carcass to use for stock. There was a thigh, more than one side of breast, two wings, and scraps. The wings were to hard to bone so they stayed to add meat to the stock

The meal was light and dark meat turkey, very tasty and moist, the last of the beets & greens, and most of the mashed potatoes. The remaining gravy was extended with Bual and arrowroot; and served over the potatoes and turkey. I almost think I enjoyed the repeat more than the first, This was all enjoyed with another 1998 Pommard-Epenots, this one from Bernard Fèvre, opened and poured about 45 minutes before dinner service - fill just below the cork; dark ruby in color; rich nose and flavors of cherries and berries; a balanced mid-palate with bright fruit and good acidity; and a long fruity finish. Initially it was a bit tannic and hard, but with air and in our Sommelier Bourgones, it smoothed out with the dinner.

Then for dessert we had the usual TJ’s chocolate bars, milk for Carollee & 72% dark for me, with a nice 10-year old Kopke Port - Good fruit, not as woody as some previous, and enjoyable with the chocolates. It was nice while watching a couple TiVo’d shows,
