Repour wine saver - anyone use this?

The Olivier tonight is gone.

I haven’t had any luck with corvin. It has been a torrential waste. I need to try these.

Exactly. I often use vermouth for a negroni or other drink, the pop the repour back in. I change it after 4 or 5 pours. The vermouth has lasted well over a month in the refrigerator with these, if you make sure to get a good seal.

This is exactly what I have been doing and I’ve had good results. Have gone through several boxes of 20. Was planning to order more on Berserker Day!

I guess I’m the only one here that often can’t get the Repour to make a seal on the bottle I’m pushing it into? On most bottles (about 70% maybe) it works fine. But on others, I push and twist, but when I release, the Repour simply rises up to the point that it’s not at all clear that there is a sufficient seal around the device to prevent oxygen from flowing in…It seems to be the biggest problem with Bordeaux-style wine bottles from other regions (Tuscany, Rioja, etc.)…

I did have that happen once that I am aware of. I taped the Repour to stay in place. Not ideal, but it worked.

I don’t mean to be contrary, but it’s hard to credit that this would matter. Once you remove the seal from the Repour, it will start absorbing oxygen from the air, whether the air is in the room or in the bottle (once you open the bottle, air will immediately fill the space left by the wine you poured out). So if you leave the Repour in the air during a second pour, it shouldn’t matter much unless the Repour absorbs oxygen very quickly, which I don’t think is the case.

But this does bring up some questions:
exactly how fast does the Repour absorb the oxygen from, say, a bottle that’s half empty, after the Repour is inserted?
how long can you leave a Repour open before its oxygen removing ability is gone?

I’ve had good luck just waiting until I’m done with the wine for the night, then putting in a Repour. Yes this does leave the wine exposed to air longer than it could be, so there must be some difference, but I haven’t noticed that–doesn’t prove it’s not happening, of course.

I agree with the first part…it’s impossible that the Repour is sucking oxygen up in real time, as the device would be partially “used up” within seconds of initially removing the covering, and then again every time you removed it to pour more wine. My experience is that after about an hour of putting the Repour on the bottle, you will notice a suction sound when you remove it. Thus, I think it takes about an hour or so just to remove the amount of oxygen in the headspace. That said, the instructions to the device do state that you should apply it to the bottle as soon as possible so that you can minimize the time the oxygen has to work on the wine. That period of a few hours before you initially put the Repour device onto the bottle could make a big difference, particularly where you’re looking to preserve the wine for more than just overnight.

The problem is that I don’t always KNOW when I might finish a bottle, or when, in the course of drinking it, I might think "this wine is sooo good that it’s worthy of using up one of my Repour devices to maximize my chances that it’ll still be good tomorrow. Though there are occasions when I open a bottle with the specific intent of just having one glass or so (and then finishing the bottle the next day), I typically use Coravin for those instances. I only use Repour when, AFTER opening the wine, I decide that I’m not gonna finish it and I also believe the wine is good enough to justify using a Repour…

Thanks. One hour sounds like the right time scale to me.

A slight hijack- but found this article regarding storing vermouth.

Excited to try this BerserkerDay special with the hope that it can help preserve older wine over the course of a few days.
Opened a '90 Manzone Barolo Cuvee Marc de Grazia and decanted part of it into a 375ml bottle and topped it with a Repour. It was placed in the fridge for tasting on a later day.

Day 1 TN: High-toned with notes of pitch, menthol, violet, allspice, anise, leather, plum, Chambord, cocoa, and balsam. Full-bodied with medium-plus acidity. Mouth-watering finish with moderate tannins and overall intensity (91pts).

Day 2 TN: Still had a glass left in the original (non-Repour bottle). The nose shows more harmony with mahogany, sweet mint, dark fruits, rosemary, leather, and iodine. Full-bodied and has lost some energy, but still in good shape (89).

Repour bottle: Similar on the nose with more lift. Extra depth and power in comparison. Additional sour cherry, leather, and tobacco notes. Not as juicy as Day 1 but it leaves a much more lasting impression on the back half (92).

Very happy with the first go around. :slightly_smiling_face:
