Cornutt has tried this with a 1-1/2 inch thick strip steak, and reports excellent results

you do not need a fancy machine to do beef or pork or foul
I use the biggest stockpot I’ve got and a temp probe
rigged to get a good reading.

while I’ve done 1.5 inch steaks, I prefer to do thicker ones
If I wanted to do eggs or fish or any of the 48 hour thing I’d buy a real machine…

Oh be fair…

This produced the best steak I have ever made. A perfect medium rare. I used a 140 degree F bath with a cold steak. I left it for two hours in the Igloo Playmate cooler. The final temp was between 130 to 135 F after searing. Next time, I am using a 130 degree F bath and going for a rare steak. Hoping for around 125F.
The steak was VERY moist. The texture was so much better than just grilling straight up. FWIW.

My ghetto system is just like Mel’s. Works just as well as my neighbor’s Sous Vide Supreme.
