Recipes/uses for pulled pork other than a sandwich

Since it’s fall, it’s time to make more batches of pulled pork. Other than putting it on a bun with coleslaw for a traditional PP sandwich, what other uses do you like for PP? I’ll also try PP on a pizza, of course.

Tacos, Quesadillas, Nachos and I also like it with scrambled eggs.

Um, scooping it up with your bare hands and inhaling it?

Bo ssam, with pickled veggies, chili, and mayo.

Really shred it up, add in some drippings/fat and make rillettes.

Pizza! Use BBQ sauce as the sauce base.

You could always switch it up a bit and make a mexican pork tinga, which is shredded pork on tortillas. Cook’s Illustrated has a good recipe that I have made several times.

On a plate- Potato pancake, pork, slaw, BBQ, scallion.

Pulled pork and spaghetti squash (I can’t eat regular spaghetti) tossed together and then mixed with light BBQ sauce and cheddar melted on top.

Use it like taco meat and make a pulled pork salad.

Yeah, that’s what I did tonight; worked out quite well.

I’ll try some of the other methods as I work through the batch.

Ropa vieja. I know its a beef dish, but works a nice change up.

Sliders, tacos, burritos, egg scrambles, skillet potatoes, etc

Crisp it a little in a pan and add to the top of butternut squash ravioli with brown butter, particularly if the pork is smoked. The smoke and savory pork balances the sweetness of the squash.

It also plays well with a cream sauce, so smoked pork Alfredo, smoked pork Benedict with Mornay instead of hollandaise, or crisp pork layered with fresh pasta sheets and topped with a mustard herb bechamel sauce are some other good options.

In another direction, a pork, apple, and potato hash with a blueberry or blackberry gastrique would be tasty. A fresher option is to top a salad of fennel with a vinaigrette that includes blueberry or blackberry compote, or a fennel and apple salad.

Another thought is to serve it with a quick sauté of cabbage, apples, and vinegar, with store bought pork gravy that is doctored up with white wine, sautéed onions, mustard, vinegar, and herbs to offset the processed food favors. I’d crisp the pork first in a pan that isn’t non-stick and sacrifice a little of the pork to build a better fond, add onions and maybe garlic, deglaze with wine, add the gravy, then mustard and finish with fresh herbs, and toss the pork and sauce with spaetzle or serve with roasted potatoes or some form of potato pancake.

So no one here’s got any ideas, huh?

Tamales +/- salsa, cheese, peppers, onions, cilantro, etc. I’ve also done twice cooked pork as a Szechuanese - Redneck mashup. I’ve always wanted to try them as egg roll filling but have not gotten around to it.
