I opened this wine with a group of producers from around the world while visiting Japan for my importer’s big event. We were at an Unagi specialty restaurant in Nagoya. Everyone brought their own bottles, but this Pinot ended up being one of the most popular wines and disappeared quickly!
It’s a shame I didn’t make enough and can’t hold on to them to release later, but that’s part of the charm of whole cluster fermentation that it evolves so beautifully with time! Totally worth the risk of making such a grippy wine when it’s young.
