Phô and Zinfandel

Tonight’s supper was a Phô soup, using the leftover carpaccio from a week ago, with Phô base (from TaLin in Abq), onion, and bean sprouts. We enjoyed it on a warm, but cooling evening out on our patio. I’d only had Phô at lunch with iced jasmine green tea, so it was interesting to pick a wine for dinner, We decided to try a Zin. We had a 1999 Ridge Dusi Ranch Zinfandel (ATP) - rich ruby-garnet in color; good rich, spicy berries in nose and flavors; adequate acidity to work with the rich broth and the chiles with the fish sauce accompanying; and a medium long berry finish. It was a surprisingly good, enjoyable combination.
