Tonight’s dinner was Pollo Real French Label Rouge whole chicken legs, seasoned with granulated garlic, garlic pepper, thyme, and chervil, pan-grilled on our ridged Calphalon grilled pan. Veggie was frozen corn cooked in sugared water, drained, and finished with butter, coarse sea salt, and freshly ground black pepper. Wine was a 1983 Domaine Maume Gevrey-Chambertin ‘En Pallud’, a village Lieux-Dit - fill a cm and a half below the capsule; color a light orange-brown with a wide light brown edge, darkening very quickly to a bright ruby-garnet with a thin clear edge; rich, mostly spicy dark fruits, black cherries, black currants, and black berries; barely adequate acidity; with a medium long, spicy fruit finish. It was very enjoyable with the chicken.
