Tonight’s dinner was pan-grilled catfish in Meyer Lemon Olive Oil, seasoned with SI Spicy Seafood Seasoning, Lemon Peel, and after turning - tarragon and chervil, then topped with the pan-drippings de-glazed with dry vermouth with a little more Spicy Seafood Seasoning, tarragon, and chervil. Veggie was broccoli, boiled in water with added Thai fish sauce and chopped garlic; and finished with black pepper and EVOO. Wine was a light but tasty 2001 Merryvale Starmont Napa Valley Sauvignon Blanc (93% Sauvignon Blanc and 7% Semillon) - no color on the cork, with fill still under the capsule; very light fruit, with adequate acidity; and a medium long fruity finish. We decided we were full enough, we didn’t need dessert.
