I wish I could enjoy a Costco steak as much as Flannery or LaFrieda or other expensive steaks. I would save a lot of money.

The further you get away from France and French cuisine the guide becomes less and less useful.

I literally don’t go to almost any steakhouse for this reason. I really don’t understand how these restaurants get away with this.
I make a way better reverse seared, grass fed, bone in ribeye at home. I do make exceptions for some great wagyu (I love bourbon steak) and a few of the NYC staples. Otherwise I’d much rather go to a french bistro or some 1 Michelin star type places that have great food and reasonable corkage.
