After going through some expensive all-clad we got for our wedding, we decided on the use for a few years and toss approach. After trying many of the cheaper ones we found one we really like - the Tramontina (found the first ones at Costco). Reading this thread I see it is the one recommended in the linked review. It really does seem to work better than the others we have tried.
I’m in need of another nonstick pan, as I use it for breakfast 6 days a week, so I only get about 2 years of use from them, even the pricier ones like this Analon copper something or other…
Stratanium is the new nonstick coating from Scanpan (came out sometime in the past year). It’s supposedly even more non-stick and more durable than their previous coating (which if true is pretty astounding!). I’m not sure, but I suspect it is still based on their Ceramic Titanium technology, just improved (Scanpan has always had a confusing website). I haven’t tried one yet, but they are obviously trying to get rid of their stocks of the older pans since there is a sale on their website (and other stores like Sur la Table…Scanpan CTQ is Sur la Table’s branded version of Scanpan CTX, and their sale price is even lower than Scanpan’s).
Although I haven’t tried the new coating yet, I would have no problem buying one of the old pans (if fact I just did, for a Mother’s day present). In my experience, they seemingly last forever and are twice as good as any other non-stick pan I’ve ever owned (All-Clad, Calphalon, Circulon, yada, yada, yada…).
Great surface, weight, conductivity. And I think moderate high heat is Ok, 450 in oven iirc.
My previous fave was aHenkel, still in use after many years (I think ten, I’ve lost track), the interior is actually holding up better than the outside. But out of production now. I have couple of modern Henkel but prefer Le Creuset.
