This was pretty interesting was also a well researched/written piece. I hope MSG gets the reexamination it deserves. It’s ridiculous that Chang is creating products that are very high in MSG instead of just applying MSG. He has no problem with MSG (nor do I) but wants to avoid the stupid stigma that surrounds MSG.
It’s funny, self proclaimed foodies decry the adding of powdered MSG, however they love ramen, “natural” glutamates, and Myhrvold’s Modernist Cuisine tomes.
That reminds me, I need to refill my Ajinomoto shaker.
I can understand the opposition to artificial v natural. It’s like mega purple in wine.
Give me something with MSG in it and then let me use your bathroom. I will show you it is definitely not a stupid stigma. Stuff absolutely kills my digestive tract.

Do you eat parmesan or soy? Both high in MSG. If it really makes you sick you should consider calling the woman listed in that article. She is itching to get proof about MSG being bad. You could be a hero

No problem with them at all. The issue is an allergic reaction to the man-made MSG.
The part about the saliva dissolving the MSG per the article you posted is BS. Much of what is in foods makes it all the way to the GI tract. Where in certain people it wreaks havoc. My father has the exact same problem. He didn’t know what it was stopped eating foods with MSG it stopped happening. It does not seem to bother either of my kids.
